Ingredients
3 tablespoons extra-virgin olive oil, divided
5 cloves of garlic, minced
1 bunch asparagus
1/2 cup fresh chives
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 pound whole-wheat pizza or gluten free pizza dough
1 cup shredded fontina, vegan, or mozzarella cheese
1. Heat the oven to 450° then place the pizza stone or large pizza pan in the oven for at least 15 minutes to heat up.
2. Combine the garlic and 2 tablespoons of the olive oil in a bowl and set aside. Chop the chives then cut the asparagus to about 5-6 inches long. Cut the thicker pieces of the asparagus in half. Toss the chives, asparagus, remaining 1 tablespoon olive oil, salt, and pepper together.
4. After the pizza pan or stone is heated, carefully remove it from the oven, and place the dough on the pan in about a 14-inch circle.
5. Spread the garlic and olive oil mixture on the dough. Then place the asparagus in a circular pattern on the dough with the tips facing out. Evenly spread most of the chives on the pizza then top with cheese and the remaining chives.
Bake for about 15 minutes and enjoy!
Another way to eat these is as an appetizer. Just cut them into little squares and serve. It is great cold or heated up for lunch the next day too.

Great recipe Carolyn! I love pizza as well. I haven't had it since going gluten-free. I've been lactose-free for 10 years now. Hopefully I'll be able to come back around to pizza again soon. Alternatives are just so expensive, so I stick with fruits and veggies a lot.

I make a lot of dairy free dishes too, and sometime I cook gluten free because I love the different variety of grains like amaranth and rice flour. I did use Bob's Red Mill Gluten Free pizza crust for this pizza before, and it was pretty good. I bought it from http://www.swansonvitamins.com/bobs-red-mill-gluten-free-pizza-crust-16-oz-pkg and it was only about 2.50 a crust. I know dairy is hard to replace though. I am still searching for a good non-dairy cheese though. Good luck!
